This zucchini hummus is the perfect side to go with almost anything!
Ingredients
3 medium zucchini; roasted
The juice of a key lime
1 small spring onion
3 tbsp tahini
2-3 tbsp coriander; chopped
1 tbsp grapeseed oil
1 tbsp onion powder
1 tsp pink himalayan salt
1/2 tsp ginger powder
1/2 tsp allspice
1/2 tsp cayenne pepper
Directions
To begin, preheat oven to 350 degrees farhenheit.
Cut the zucchinis lengthwise into slices (2-3cm thick) and lay them out on a baking sheet.
Drizzle some grapeseed oil and a few dashes of pink himalayan salt and cayenne pepper over the zucchinis and bake for 20-25 minutes or until the zucchinis are well roasted and begin to darken.
Transfer the roasted zucchinis along with the spring onion, coriander, tahini, grapeseed oil and seasonings to a high-speed blender and blend for 60-90 seconds or until well mixed.
Transfer to a bowl and enjoy warm or leave it in the fridge for 1-2 hours to thicken before serving. Enjoy!
