Spinach Samosas

These spinach Samosas are delicious and easy to make. You can add your own favourite vegetables to them and enjoy!

Dough:

  • 2 cups spelt or kamut flour
  • 1 cup spring water
  • 3 tsp grapeseed oil
  • 1 tsp pink himalayan salt

Samosas Filling:

  • 4 Cups Spinach
  • 2 small sweet potatoes
  • 1 red bell pepper
  • 1/4 red onion
  • 2 garlic gloves
  • 1 tsp pink himalayan salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 cayenne pepper
  • 1/2 paprika
  • 1/2 all spice

Directions

  1. To begin, add the dry ingredients for the flour to a bowl and mix thoroughly. Then, slowly add spring water and oil until a dough ball can be formed.
  2. Drizzle some grapeseed oil over your hands to stop the dough from sticking to your hands. Place the dough on a clean floured surface and knead by stretching it between both hands continuously , you will need to do this for about ten minutes until the dough is very springy and stretchy. Add more spring water if too dry and more flour if too wet.
  3. Let the dough set and place it in the fridge for 15 minutes.
  4. While the dough is setting, boil sweet potatoes and finely slice and chop all vegetables.
  5. Next, combine vegetables, sweet potatoes and seasonings in a large bowl.
  6. Once the dough is ready, kneed it for a couple of minutes and split it into separate parts. (the quantity depends on your desired samosa size - I would recommend dividing it into 5-8 parts).
  7. Roll the individual dough parts out into 10-20cm circles (depending on your desired samosa size).
  8. Next, place approximately 1/2 cup of filling in the center of each circle. Coat the edges of the dough circle with grapeseed oil. Fold one end of the dough towards the other end and press together with a fork.
  9. Lightly brush parchment paper and samosa with grapeseed oil. Use a fork to add a few holes in the samosa to prevent bubbles from forming. Bake samosas on 350 degree farhenheit for 25-30 minutes.
  10. Cool for 10-15 minutes before serving. Enjoy your patties !
