Chickpea Hummus Pasta

When you're short on time but still crave something delicious, this recipe is the perfect choice.

Ingredients

  • 1 cup cherry tomatoes
  • 1 cup hummus (see chickpea hummus in the sides section)
  • 1 cup reserved pasta water
  • 1/3 cup spinach sliced into strips
  • 1 red bell pepper
  • 200-250 g chickpea pasta
  • 2–3 tbsp grapeseed oil
  • 1 tsp pink himalayan salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/2 tsp rosemary
  • 1/2 paprika
  • 1/2 cayenne pepper

Directions

  1. To begin, preheat oven to 400 degree Fahrenheit.
  2. In a large baking dish, add in your cherry tomatoes and 1 tbsp of grapeseed oil and mix until well combined. Then add the pre-prepared hummus to the baking dish.
  3. Sprinkle dry basil, oregano, rosemary, garlic power, onion powder, cayenne, paprika, and the remaining grapeseed oil over the hummus and tomatoes. Then place in the oven to bake for 25-35 minutes or until tomatoes are roasted.
  4. In the meantime, prepare your pasta, make sure to season the pasta water with pink himalayan salt. Reserve 1 cup of pasta water for the sauce once the pasta cooked.
  5. Once the tomato and hummus mixture is ready, use a potato masher or fork to mash the tomatoes and mix with the hummus until well combined. Then add the pasta water, spinach, and red bell pepper and stir until well combined.
  6. Next, add in the cooked pasta. Combine well and add pink himalayan salt and cayenne pepper to taste.
  7. Place in the oven for 10 minutes for an extra crunchy top layer.
