One Pot Quinoa Dish

Don't feel like washing up? Just cook it all in one pot! This recipe is quick, simple and easy.

Ingredients

  • 1 1/2 cups spring water
  • 1 cup quinoa, uncooked
  • 3/4 cup blended plum tomatoes
  • 1/2 cup white onion, chopped
  • 2 tbsp grapeseed oil
  • 1 tbsp basil
  • 1 tbsp oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp allspice
  • 1/2 tsp cayenne pepper
  • 1 tsp pink himalayan salt

Toppings:

  • 1/2 cup coriander, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup raisins or dates, finely chopped

Directions

  1. To begin, add grapeseed oil to a large skillet over medium heat. Then add the onions and pink himalayan salt to the pan and saute for 4-5 minutes until onions start to caramelise.
  2. Once the onions are golden-brown, reduce the heat to medium-low.
  3. Next stir in the blended plum tomato mixture and let it cook for about 2 minutes.
  4. Now transfer the washed quinoa to the pan along with the seasonings and increase the heat to medium-high. Then, add spring water and bring to a boil. Reduce the heat to low and let it simmer for 20-25 minutes or until the quinoa has absorbed the liquid.
  5. Add , raisins/dates, coriander and sun-dried tomatoes and mix well.
  6. Serve warm or cold, and enjoy !

Tip: This meal can be stored in the fridge for up to 5 days.
